Ingredients

  • Parsley or fresh coriander.

  • 120 grams of rice noodles.

  • Extra virgin olive oil.

  • 200 grams of firm tofu.

  • Salt to taste.

  • A red bell pepper.

  • Ground black pepper to taste.

  • A piece of fresh ginger.

  • One lime

  • 15 milliliters of soy sauce.

  • One tablespoon of ground turmeric,

  • A quarter tablespoon of granulated garlic.

  • Half tablespoon of ground curry.

Steps for the preparation of rice noodles with tofu and bell peppers

  1. Wash the tofu very well and drain it to completely discard the cooking liquid.

  2. Wrap the tofu in several layers of kitchen paper and let it rest for at least 15 minutes with something weighing it down.

  3. Once the time indicated above has passed, cut the tofu into small pieces.

  4. Place a pan on the fire and pour oil to heat it. Let the pieces of tofu brown in the pan on all sides, then remove them and let them rest on a separate plate.

  5. Cook the noodles in boiling, lightly salted water for at least 3 minutes, according to package directions. Then, drain them and rinse them with plenty of cold water. With the help of a fork, loosen them a bit to prevent them from sticking together. Reserve.

  6. Chop the ginger and bell pepper into very small pieces and sauté both ingredients in a pan with hot oil.

  7. Season to taste and add a little soy sauce. Let all this sauté for 5 minutes, adding the spices halfway through cooking.

  8. Add the tofu to the pan, turn it over and let it cook for a couple of minutes. Later, add the noodles and mix everything so that they are integrated.

  9. After a couple of minutes of cooking, remove from the heat and serve, sprinkling a little chopped parsley or coriander to decorate.

Ingredients

  • A tablespoon of chemical yeast.

  • A little water, necessary amount (optional).

  • 240 grams of cooked and drained chickpeas.

  • 30 milliliters of extra virgin olive oil.

  • 2 slices of sliced bread.

  • A bunch of cilantro and a bunch of fresh parsley.

  • 50 grams of onion.

  • Half a teaspoon of paprika.

  • 2 peeled garlic cloves.

  • A tablespoon of ground cumin.

Steps for its elaboration

  1. Wash and drain the chickpeas, and then begin to crush them. You can do it with a food processor or with a mortar.

  2. Take small portions of this resulting dough and make small balls of similar sizes with them. For this step, it is recommended to moisten your hands a little to prevent them from sticking to you.

  3. Place the balls on a tray with wax paper on top and use your hands to flatten each of the balls a bit.

  4. Transfer the tray to the fridge and let the balls sit for at least an hour.

  5. After an hour, remove the balls from the fridge and take them to the oven preheated to 180º C with heat up and down. Let the balls cook for 20 minutes or until you notice that they begin to turn golden.

  6. Halfway through cooking, turn the balls over to make sure they cook evenly.

  7. Remove the balls from the oven and serve immediately with your choice of sauce and sprinkled with chopped fresh parsley or cilantro.

Vegan tofu scramble

Ingredients

  • Extra virgin olive oil, necessary amount.

  • 250 grams of firm tofu.

  • Parsley or fresh coriander.

  • Salt and ground black pepper to taste.

  • Half red onion.

  • A stalk of celery.

  • A little water, necessary amount.

  • A piece of ginger.

  • Half tablespoon of tomato concentrate.

  • The zest of a lemon.

  • White wine, necessary amount.

  • Half tablespoon of ground turmeric.

  • A pinch of paprika.

  • A quarter teaspoon of ground cumin.

Steps for the elaboration of the tofu scramble

  1. Wrap the tofu in kitchen paper once you've washed and drained it. Let it sit for at least 15 minutes with some weight on top.

  2. After 15 minutes, chop the tofu very finely and reserve.

  3. Chop the celery and the previously peeled ginger into very small pieces.

  4. In a pan, pour a little extra virgin olive oil and let it heat up a bit on the stove over medium heat. Add the ginger there and cook for a few minutes.

  5. Once it begins to give off a pleasant aroma, add the onion and celery chopped into very small pieces. Later, sprinkle salt to taste.

  6. Add the tomato paste and spices, as well as a little wine, the amount you consider necessary. Let all of this cook for at least 10 minutes.

  7. Crumble the pieces of tofu that you had previously chopped. To do this, you can use a fork to make it easier until you get a grainy texture.

  8. Add the tofu to the pan and season to taste. Later, add the zest of a lemon and mix well.

  9. Sauté some more with the spices and if you think it's a little dry, add a little more water.

  10. Cook everything for at least 8 minutes and serve while it's still hot. Sprinkle some chopped parsley or cilantro on top.

Cashew butter

  • 250 grams of cashews.

Steps for making cashew butter

  1. Place the cashews in a food processor or blender and allow them to grind for at least three minutes.

  2. Stop the grinder for a minute and turn the grinder back on. Repeat this process about ten times and while you do it, you will notice how a creamy appearance is formed.

  3. You will know that the butter is ready when you get a smooth and easily manageable paste.
