Preparation of eggplant and cheese meatballs in sauce

  1. First you have to wash the aubergines and dry them. You can help yourself with an absorbent paper.

  2. Then, place them in a mold or tray, to add a little olive oil.

  3. Then, take the aubergines to the oven at 180 ° C.

  4. After 20 minutes, the aubergines will be ready. Wait enough time for them to cool before peeling them and removing the pulp.

  5. To the pulp you have to add 1 clove of grated garlic.

  6. Now add some cheese and flour. Mix everything and as a result you should have a good base.

  7. Add salt, pepper, and chopped parsley for color.

  9. Put a little oil in a pan to prepare the meatballs.

  10. When they are ready, they are removed and drained.

  11. When the meatballs are cooked, start preparing the homemade tomato sauce.

  12. To do this, you must peel the tomatoes, cut and remove the seeds.

  13. Put oil in a pan to fry the tomatoes.

  14. Add a little sugar, salt and pepper to the tomatoes.

  15. Then add the meatballs.

  16. Let cook for a few minutes and they will be ready, you can serve and that's it!
