Seed cookies are one of the recipes that have changed the most over time. As it is one of the most consumed snacks, I bring you a recipe made with chickpea flour that reduces the amount of calories they usually have.

These are quite quick to make and very crunchy not only because when they brown, they are toasted, but also because of the amount of seeds and nuts they can carry.

Chickpeas

Will require

  • 2 tablespoons chickpea flour,

  • 70 grams of chopped raw hazelnuts,

  • 100 grams of raw almonds in canes or slices,

  • 35 milliliters of honey,

  • 2 large eggs,

  • 1 pinch of salt,

  • Lemon zest to taste

Processing method

1. For the mixture we must start by placing the eggs in a bowl and mixing them with two tablespoons of honey.

2. Lightly beat the mixture and add the pinch of salt.

3. Proceed to add the chickpea flour and continue mixing gently.

4. Continue adding the almonds, hazelnuts and lemon zest to taste, mixing everything well.

If necessary add one more tablespoon of honey to obtain a somewhat viscous mixture.

5. A tray must be prepared and on this place the mixture with a spoon, making circles with the concave part and trying to flatten it.

6. It is time to preheat the oven to 160 degrees Celsius and carry the tray for about 20 minutes until they are golden brown.

7. Take out and wait for them to cool and then put to rest on a rack. After a few minutes they will be ready to eat.

If you want to caramelize them, use a natural sweetener such as honey. This recipe is very delicious, and you can make them from the fruits that you like the most.

They are quite well-preserved for being nuts, but it is necessary to avoid temperature changes.
