Ingredients for the preparation
4 large cabbage leaves and carefully washed previously.
125 grams of ground pork.
125 grams of beef.
2 and a half cups of white rice.
8 cups of broth (can be beef or pork).
4 tablespoons of oil, preferably olive.
1 onion, chopped into pieces.
1 tablespoon of grated cheese.
2 tablespoons of butter, preferably unsalted and low in calories.
Salt to taste.
Ground white pepper to taste
A glass of white wine, sherry, or whiskey (optional)
How to prepare this dish?
Note: In order to avoid confusion during the preparation of this recipe, we will divide the process into two parts.
Preparation of the leaves
Add water to a saucepan over medium heat, along with a pinch of salt, and bring to a boil. Add the blanched cabbage leaves to the water and wait until they are blanched and soft to handle.
When you notice the texture described above, take them out and let them cool completely.
Cut the leaves in half and cut the central stem of the leaves, being careful not to break. In case the sheets are too big, it is also possible to cut them into four pieces, so that 4 rolls of the sheet come out instead of two.
Place the cabbage leaf pieces in a bowl, cover and set aside.
Preparation of the filling
Heat the oil in a saucepan over the fire, and sauté the onion, letting it cook until golden brown.
Once the onions are cooked, add the meats, stir, add the rice and once everything is sautéed, add the broth, salt and pepper to taste.
Let all these ingredients cook very well for 15 minutes with the pot covered and then remove from the heat.
Take out the cabbage leaf pieces again and spread the mixture over them, evenly distributing, so that there is enough mixture for all the pieces. (A good serving is one teaspoon for each roll.)
Place the tablespoon of filling at one end and roll over it until the filling is completely covered. You must repeat this same procedure on all the leaves and hold them with a toothpick.
Grease a pan or baking sheet with the butter, place the cabbage leaves, sprinkle with the grated cheese and place in the hot oven for a few minutes until golden brown. A good portion of time is 30 minutes.
Place the rolls on a plate and enjoy hot.
