What is acrylamide?

A chemical substance is known as acrylamide, which is used mainly to make known chemical compounds of polyacrylamide and acrylamide. Acrylamide is a substance that is produced during preparation, by baking or frying, in carbohydrate-rich foods such as bread, pasta, or cookies.

However, we must bear in mind that polyacrylamide and acrylamide copolymers are also used in industrial processes. Specifically, this substance can be found in the production of paper, dyes and plastics.

What are the risks of acrylamide?

As we already mentioned, this is a carcinogenic substance, which has the ability to destroy all organs. Acrylamide in food can cause the development of genetic mutations and tumors. But it can also do a lot of damage to the nervous system and the development of the fetus in the case of pregnant women.

It is important to note that it has not been possible to give a tolerable dose, since any type of exposure to this substance can cause DNA damage. Which, as we can imagine, increases the possibility of developing tumors.

The problem with this substance is that it cannot be banned even knowing that it is carcinogenic. We must bear in mind that it is impossible to remove starch from food.

This is why the recommendation of many specialists is that people eat a varied diet, where we include fruits and vegetables.

The aforementioned is important, since there are foods that have a contribution of antioxidants, and an anti-cancer and anti-inflammatory effect. Due to this it has the ability to reduce the harmful effects of acrylamide.

It is important to mention that the fact of consuming this substance does not mean that we will develop some type of cancer in the future. We must bear in mind that cancer is a complex and multifactorial disease.

Acrylamide is only a toxic substance, but as we mentioned, with a varied diet we are able to reduce its carcinogenic effects.
