Many believe that to prepare excellent pancakes, the egg is essential, however, they are wrong.

The egg gives pancakes firmness and suppleness at the same time, but this can be achieved with other vegan foods, such as oatmeal and bananas.

The oats will act as flour, and the banana will also work as a sweetener. Both have an ideal texture that compacts giving body.

For this dish you will need mainly 3 foods:

  • 1 cup of oatmeal in flakes or in flour.

  • 1 large Banana.

  • 1 cup of vegetable milk of your choice.

  • 3 tbsp of coconut oil.

These vegan breakfast recipes are very simple, and you can prepare them right away or the night before.

If you have oatmeal flakes, process it through a blender, so you will make it into flour. This way you will have firmer, more compact and softer pancakes. In the event that you are intolerant to gluten, choose a brand of gluten-free oats.

Reserve the flour in a bowl, now in the blender pour the coconut milk or your preference , along with the chopped banana without peel. There mix well, then integrate the flour and blend again until you get a homogeneous mixture.

Once ready, let the mixture rest so that the flour absorbs enough liquid, it is recommended to leave it overnight, but leaving it for about 5 minutes before mounting it in the pan will be enough.

Cook each pancake over medium heat, and even if they have already crusted on the surface, cook for about 5 more minutes, without letting them burn.

Sandwiches are a delicious and convenient dish to make for breakfast. But most of the preparations include meat or other animal derivatives, so how to make a vegan sandwich?

Although there are different fruits and vegetables that make things easier for us, let's get out of the ordinary, and try this chickpea salad sandwich recipe. And for this you will need:

  • Wholemeal bread.

  • Lettuce or other green leafy vegetables.

  • 2 cans of chickpeas.

  • ½ avocado.

  • 2 tbsp of chopped parsley.

  • ¼ cup of chopped red onion.

  • 2 carrots chopped into small cubes.

  • ½ cup vegan mayonnaise

  • 2 tsp mustard.

  • 1 tsp of the juice of a lemon.

  • Salt to taste.

Start by preparing the chickpea salad, for this you will need to crush the chickpeas in a bowl. To this, then proceed to place the chopped avocado into small cubes or crush it.

Continue integrating the carrot, parsley, onion, mayonnaise, mustard, lemon juice and of course, salt. Mix it well with a spoon and reserve.

Now take your bread, create a bed with the green leaves you have chosen, add the salad, place another layer of green leaves and close with the bread. If you wish, you can add alfalfa as an additional touch.

3. Vegan arepa for breakfast

The arepa is a dish from South America, specifically from countries like Venezuela and Colombia, and is a kind of cornmeal sandwich. Although originally it is not the most vegan, we can easily adapt it with other foods for our diet.

Making it even more vegan and healthy, let's prepare the dough with carrot and oatmeal, but so you can make them, I show you what you will need:

  • 4 tbsp of cornmeal.

  • 1 grated raw carrot.

  • ¼ cups of oatmeal in flakes.

  • 1 tsp finely chopped coriander.

  • 5 cd of water.

  • Salt to taste.

To start the dough, in a bowl pour the grated carrot, along with the flour, water and a touch of salt, mix well. It can be with a spoon, but it is recommended with your hands.

Once everything is united, to give firmness to the dough, add the oats and knead. When the dough is ready, mount a non-stick flat skillet over medium heat and wait for it to heat up well.

Take a medium portion of the dough, and make a ball with your hands, then flatten it until it is 2 fingers thick, and then transfer it to the pan.

Cook them on each side until they are golden brown, then lower the heat to very low so they cook for 5 more minutes.

Now you can take them out, open them up a bit and fill them with whatever you want.

4. Oatmeal waffles

The original recipe is not vegan, but this is not a problem. Let's adapt them, for this I show you this vegan recipe for breakfast of oatmeal waffles. If you want to enjoy this dish, take note of the following:

  • 70 g of oatmeal.

  • ½ cup of almond milk.

  • 1 tsp baking powder.

  • 1 seedless Medjool date

To make it easily, take a blender and mix all the ingredients. In the event that you do not have oatmeal, you can take dry oatmeal, and blend it alone.

Once the mixture is ready, take the waffle maker, previously greased with coconut oil or another type, and place a portion to cook.

Remove and serve with fruit and some sweets or yogurt to activate your mornings.
