Generally prepared during Holy Week in most Spanish homes, torrijas are characterized by their delicious flavor, the only point against them is that they are food with a high caloric content. How does it sound to enjoy their delicious flavor without worrying about calories? Well, this is precisely what is achieved by betting on its vegan version.

What are vegan pancakes?

The term vegan is awarded to it because its preparation does not include eggs or food of animal origin, so anyone who wants to bet on a healthier option can eat them without giving up the flavor and texture of the originals, since the only thing that The difference is the inferiority of fat content that one of the other supposes, becoming the ideal recipe for those who take care of their diet.

What's so special about vegan torrijas?

In addition to being healthier for being free of saturated fats and sugars, vegan French toast stands out thanks to its nutritional value, the reason for this is that it is the almond milk that gives it the special clear sweetness, it can also be complemented with a little stevia, in addition to having wholemeal bread as its main ingredient, an indisputable source of fiber and complex carbohydrates that, with little fat content, provide B vitamins and essential minerals.

How to prepare vegan pancakes?

Whether for a special breakfast, or a family snack, vegan torrijas are an excellent option to enjoy a traditional recipe from Spanish culture, without remorse! The ingredients necessary for its preparation are:

- 300 ml of almond milk

- 100 ml of orange juice

- 100 ml of water

- 6 slices of wholemeal bread

- 1 teaspoon of flax seeds

- 1 pinch of ground turmeric (optional)

- 1 cinnamon stick.

- 1/2 teaspoon ground cinnamon

- 1/2 lemon

- Stevia and honey (optional and in necessary amounts)

Preparation of vegan pancakes

The first step in making vegan torrijas requires thick slices of bread, being more specific, it is important that they measure between one and a half and two centimeters thick, reserve for later use.

Have a bowl large enough to combine the almond milk, vanilla, cinnamon, turmeric and flaxseeds, beating all these ingredients, with the help of a whisk, until you get a homogeneous result that will be left to rest for about 10 minutes minutes.

After this time, take the slices of bread, to submerge them in the preparation obtained in the previous step, for approximately 15 minutes, the idea is that it soaks well without crumbling.

A good way to do this is to flip each slice every few minutes, so they absorb liquid faster on both sides.

Having the bread ready, it is time to cook the orange juice with that of half a lemon in a small saucepan, in which the lemon peel, vanilla and cinnamon will also be added.

Assuming that you want to sweeten the French toast, it will be the ideal point to incorporate stevia or honey to taste. The syrup is ready when it has reduced a bit without boiling.

The preparation ends by heating a pancha smeared with extra virgin olive oil, in which the torrijas will be cooked on both sides over medium heat, serve bathed in a little syrup.
